Easy Vanilla Bourbon Peach Refrigerator Jam
This tasty homemade Vanilla Bourbon Peach refrigerator jam is a winner in our house, and as a plus these peaches came from Nana’s Dwarf Purple Leaf Peach tree (peep the red color). Normally you would not eat these peaches as a delicious snack, but if you cook them down, they make a great toast topper!

Why You’ll Love This Recipe
Number 1 – There is no pectin in this recipe, so you should have all of the ingredients on hand. Secondly, this recipe is super easy and very quick. You’ll want to make this refrigerator jam again and again.

Ingredients:
- 2-3lbs peeled and chopped peaches
- 1-1.5 Cups sugar
- 2 Tablespoons Lemon Juice
- 2 Teaspoons Vanilla Extract
- 1 Tablespoon Bourbon
How to Make Vanilla Bourbon Peach Refrigerator Jam:
- Add fruit, sugar, and lemon juice to pot and cook over medium heat for 15-20 minutes or until fruit is soft
- Lower heat a bit and use an immersion blender to pulse fruit to desired chunkiness (is there a nicer way to say this?)
- Add vanilla and bourbon and continue to cook on low for another 5-10 minutes, or until it is thick
- Let cool completely
- Store in a sealed jar in the refrigerator or freezer
Notes
- You can probably substitute any fruit in this recipe, I just haven’t tried it yet. Also, regular peaches should work just fine.
- Leave out the bourbon if you aren’t a fan, we just like it.
- This refrigerator jam is not going to be as thick or solid as a traditional or canned jelly, it will be like a very thick ice cream topping – speaking of it is GREAT served over vanilla ice cream!
- I have not tried canning this recipe, be sure to follow standard canning instructions.
