The red layer gets its beautiful color and flavor from freeze-dried strawberries, the blue layer comes from freeze-dried blueberries paired with butterfly pea flower powder, and the center stays perfectly white and marshmallowy.

Freeze-dried fruit powders are one of my favorite secret ingredients because they deliver both color and flavor. Unlike fresh fruit, they don’t add extra moisture that can make treats sticky or soggy. Butterfly pea flower powder deepens the blue color naturally while keeping the ingredient list simple.

Ingredients

Red Layer

  • 37 g Butter
  • 142 g Mini Marshmallows (any brand)
  • 1/2 tsp Vanilla Extract
  • 113 g Rice Krispies cereal (any brand)
  • 10 g Freeze-Dried Strawberries, powdered

White Layer

  • 37 g Butter
  • 142 g Mini Marshmallows (any brand)
  • 1/2 tsp Vanilla Extract
  • 113 g Rice Krispies cereal (any brand)

Blue Layer

Notes

  • This recipe uses 1.5 bags of mini marshmallows, 1 stick of butter, and 1 box of cereal total
  • I like to use the butter wrapper to help press the treats into the pan without it sticking everywhere
  • I usually make red first in its own bowl, then white so I can reuse that bowl for the blue layer, but you can switch up the order of your layers
  • You can melt the butter and marshmallows on the stovetop or in the microwave
  • I use a coffee grinder to powder my freeze-dried fruit, but you can also buy it pre-powdered
  • Store the bars in an airtight container at room temperature for up to 3 days, do not refrigerate
  • For cleaner slices, lightly butter your knife before cutting
  • Let the bars cool completely before cutting, overnight event better

How to Make Red, White, and Blue Rice Krispies Treats

Prep: Lightly grease the pan with some butter from your wrapper. Grind freeze-dried fruits if not already powdered.

Make the Red Layer: In a saucepan over low heat or in the microwave, melt the butter. Add in marshmallows and stir until completely melted and smooth. Remove from heat, then stir in vanilla and freeze-dried strawberry powder until evenly distributed.

Fold Rice Krispies cereal until coated well. Press the mixture firmly into the bottom third of the prepared pan using a lightly greased spatula or butter wrapper.

Make the White Layer: Repeat the process with the white layer ingredients. Melt butter, add marshmallows and vanilla, stir until smooth, then fold in the cereal. Carefully spread the mixture over the strawberry layer, pressing gently to create an even layer.

Make the Blue Layer: Repeat the process with the blue layer ingredients. Melt butter, add marshmallows, vanilla, and powdered blueberries, and butterfly pea flower. Stir until smooth, then fold in the cereal. Spread the mixture over the white layer and gently press into place.

Cool and Slice: Allow the bars to cool completely at room temperature. Once cooled, you can cover until ready to cut.
